Jalapeno Inferno has a full section of its regular menu titled “Some Like It Hot.” There, you’ll find enchiladas Nuevo Mexico ($15.99), which are smothered in red enchilada sauce and an inferno sauce, which chef Terry Craig makes daily using green chiles and homemade chicken stock. The Courtney’s burrito ($16.99) also features the sauce as well as chile rajas, which are slices of fresh chile peppers.
